Remember the Loaves and Fishes

 

So, a funny thing happened to me yesterday, thought I would share.

Last week, while shopping, I wanted to get some ground beef. I was shocked at the prices! I've never seen ground beef so expensive! I just stood there at a loss for a few minutes. Kind of looked up and down at the meat prices, not really willing to pay so much.

In a little corner of the meat aisle were some packages of ground beef with stickers on them that said, reduced for quick sale $4.63 for a pound. That was ironic since normally ground beef is $3.50 or there about. The meat still looked good and it was the lowest price they had so I went ahead and bought it. I put it in the freezer as soon as I got home.

On Saturday I pulled it out and stuck it in the fridge to thaw. I wanted to use up all the odds and end veggies I had in the fridge before they went bad. I asked my husband if he wanted noodles or rice for a casserole. He said rice. I said, you got it.

So a spent an hour or so cutting up the veggies. This is what I ended up having in my fridge: half a yellow onion, half a red pepper, half a green pepper and a half a can of corn. I had a beef steak tomato that wasn't going to make it through the week. I seeded it and chopped it up. I had an older bunch of green onions and wanted to make way for the new green onions so sliced them up.

I made some rice – but not from our stores – this was from an open bag of jasmine that we already had and that bag isn't empty. I made extra rice because it will keep in a plastic baggie for a while in the fridge and I hate making rice. Lol!

So I started cooking everything in a big frying pan and decided to see if there was anything else I could throw in. Found a fourth of a jar of alfredo sauce, some sage that was dried that had been fresh, threw them in. There was even a little container of ranch dressing left over from the hot wings we had on our anniversary, threw that in too.

Paprika is an underappreciated spice in my opinion. I love it so I put in a little extra, along with some other spices. Added some cheese on top and put it in the oven.

Out of that one pound of ground beef and my other leftovers – I had enough casserole for lunches for most of the week AND enough to freeze some for dinner next week. I estimate 10 meals altogether and nothing was wasted. It was really yummy too.

I thought about Jesus and the loaves and fishes. 5 loaves and I think 2 fish - after feeding a huge crowd of people they had 12 baskets of leftovers. That's God's amazing provision!
